After harvest, the olive is then quickly transported to the mill in plastic boxes that can not exceed 400kg. Criteria in selection of fruits before extraction begins. Only whole and healthy fruits. Washing and defoliation, followed by cold extraction, in a two-phase ecological olive press, with controlled temperature, never exceeding 26ºC. Source: In the heart of the Douro International Natural Park, where nature still retains its wild charm, it's produced in olive groves on the steep slopes of the Douro, where the hot and dry climate joins the shaley soils and a unique genetic heritage of the plants to produce one of the best oils in the world.
